MMM Good!

Tonight I cooked dinner for the family. Although it was a simple meal it was delicious if I do say so myself.

The main dish was chicken enchiladas!!!

These are super simple to make. You just cube your chicken and cook it on top of the stove with some taco seasoning of your liking. Take tortillas and brush both sides with enchilada sauce (I just used some plain tomato sauce). Fill the tortillas with the chicken and cheese, roll up tightly, and fill the pan. Lightly brush some more sauce on top and sprinkle with more cheese. Bake on 400 for about 40 minutes, or until the cheese is melted. 

This recipe can be changed up to any type of enchiladas that you like. I want to try it with shrimp next time I think. They would also be good with some grilled onions and bell peppers inside, but some people (Desiree) don't like vegetables, so we just make them plain and have the extras on the side. 

Here is my finished plate complete with some refried beans and salad (really just lettuce because we were out of sour cream and guacamole)
