Spaghetti Squash Au Gratin

This week I've sworn off carbs which means I'll be eating lot of salads. Lucky for me I love salads! I've often said that lettuce is one of my favorite foods, I love the crunch.

But as much as I love salads, some times you need some creamy, cheesy goodness in your life. I'm talking about the yumminess that can only come from some homemade mac & cheese. Well I obviously couldn't enjoy that this week, so I started looking for a substitute.

After lots of perusing of Pinterest I found a spaghetti squash au gratin recipe that claimed to taste just like hash-brown casserole. It's not exactly mac & cheese, but it's a pretty good no carb substitute.

  1. Take one medium spaghetti squash, slice in half and cook face down in the microwave in dish with about 1/4 cup water covered for about 11 minutes. 
  2. While that's cooking cook down half a large onion (thinly sliced), 2 tablespoons butter, about 2 teaspoons of Italian seasonings, a couple of dashes of hot sauce (or more if you like it hot) 
  3. Remove the squash from the microwave (be extra careful because it is SO hot) and scrap the insides out. Combine this with the onion mixture, 1/2 cup of sour cream, and 1/2 cheddar cheese
  4. Place in a greased baking dish and cover with another 1/4 cup cheese (or more, I'm not going to judge) and bake at 375 for 15-20 minutes (you really just want it to all set together and the cheese on top to melt)

  1. Oh yum! I've always wondered how spaghetti squash was and that's what's kept me from making anything with it (as of yet). This looks pretty good...
