Y'all I don't like to brag, but I make a dang good potato salad.  Not only is this potato salad a delicious addition to any BBQ, but it's super simple to make.



Boil about 2 pounds of potatoes on the stove in unsalted water until tender. They cook faster if you cut them in half before cooking, but if you forget it's no big deal. Remove them from the water and slice them to your desired size. I did mine in bite size, but I know some people prefer larger round pieces.
While the potatoes cool mix together 1 cup sour cream and 1/2 cup mayonnaise. Add your potatoes, about 3/4 cup bacon crumbled (yes, I did cheat and use buy it already cooked/crumbled), 1 cup shredded cheese (I used a mixture of Cheddar and Monterey Jack), and salt and pepper to taste.


See, isn't that such a simple recipe? And I guarantee it is 100 times better than anything you'll buy in the grocery store. This is such a great summer recipe because you don't use the oven so your kitchen doesn't get super hot.
