One of my favorite things to do when I only have a few minutes of free time is to sit on Pinterest and pin things. Obviously I love to pin things to my wedding board, because I'm a perpetually, single 20something former sorority girl who loves to torture myself with dreams of the perfect white gown and 5 tiered wedding cakes. But that's beside the point.
Sometimes I actually pin things and then do them and they come out great! Like these super simple cookies!
I'd pinned these Andes Mint Cookies forever ago and finally decided to give them a try when I discovered a box of cake mix sitting in the pantry.
Mix 1 box Devil's Food cake mix, two eggs, and 1/2 cup oil
If it looks like mud, you did it right. Drop spoonfuls (Warning these cookies expand way more than you'd expect so you'll want to use a smaller spoonful than normally) onto a cookie sheet and bake at 350 for 8 minutes.
Use this time to unwrap enough Andes Mints as you put cookies in that batch. This is the point when I discovered a bag of mini marshmallows sitting on the counter and remembered I'd seen another pin that said you can top cupcakes with them when you don't have time to ice. Well I thought, if it's good enough for cupcakes it's good enough for cookies!
Put a mint/a few mini marshmallows on each cookie
Pop back in the oven for 2 minutes. Be careful putting them back in because the marshmallows will slide and you'll have to scrap burnt marshmallows off the oven if you aren't careful, not that I'd know anything about that or anything.
When you take them out again the Andes Mints won't be completely melted evenly, so use a spoon to gently spread them across your cookies to create an icing.
These cookies were seriously so delicious and easy! They turned out nice and chewy, with is how I like my cookies. This recipe made 24 cookies, but I'd probably suggest making them smaller and doing about 30 because they're so rich.

ReplyDeleteI've made cookies very similar to these before, you cannot ever go wrong with chocolate cookies (or chocolate anything for that matter)!
